What they are:
Peruvian Cuisine combines the flavors of four continents. Its beginning dates back to the Pre-Inca era with their aji hot peppers, maize and vast variety of potatoes. With the arrival of the conquistadores, the evolution began. Over the next centuries, French, Italian, African, Chinese and Japanese influences helped shape what we know today as comida Peruana.
We welcome you to SUYO, a place where we invite you into our homeland and take you on a journey of altitude cocktails, vibrant South American wines and the flavors of Peru with a modern approach.
Jamie's thoughts:
My buddy Max Curzon-Price runs the bar program. We used to work together at my hotel, the Fairmont Pacific Rim, where he bartended at our restaurant Botanist. His cocktail program at Suyo is seriously one of the best in the city. He’s brought a unique and creative approach, which enables the whole process of ordering a lot of fun. There are separate sections, as each is paired as a theme. You can tell a lot of thought went into his delivery and style.
The room is small, warm and inviting. The food is much better than I expected, with their octopus being some of the best I’ve ever had. At first when they opened I was pessimistic and wasn’t sure what to expect. But I’ve been three times now and after each I’ve walked away extremely happy.
The room is lively too, with excellent theatre. It’s a fantastic addition to Main Street, just down from Published. Give it a go.
